I came across this recipe in an
old BBC 'Good Food' magazine (Sept.1999). This is so quick and
delicious, I just had to pass it on!
Quick Tiramisu
Ingredients:
- 2 tbspn coffee granules or powder
- 350ml/12fl oz boiling water
- 4 tbspn caster sugar
- 3 tbspn brandy*
- 425g can custard
- 2 X 250g tubs mascarpone
- 200ml tub creme fraiche
- 175-200g packet sponge fingers (boudoir bisuits)
- coca powder, to finish
* Recipe called for Brandy, but I used half Tia Maria and
half brandy which I thought was better - it's optional anyway.
You will need:
20 X 23 X 6cm/8 X 9 X 2.5in dish*
- Prepare coffee mixture: Mix the coffee, boiling water,
sugar and Brandy/Tia Maria (if using), in a shallow dish.
Set aside to cool.
- Mix the custard cream: Spoon the custard, mascarpone
and creme fraiche into a large bowl and beat until smooth
with an electric hand whisk. Spoon half the mixture into the
bottom of your dish*.
- Layer ingredients: Dip the
sponge fingers in the coffee mixture so they are well soaked.
Put approximately ½ of custard mixture in bottom of dish
(or slightly less than this if dish is wider at top), then
the soaked biscuits, in two layers. Spoon over the remaining
custard cream mixture in swirls and sift generously with cocoa
powder.
Leave to cool in refrigerator for a few minutes before serving
- even better the next day.
