LIGHTWATER BURGERS

      Ingredients:

      • 1 lb minced beef (450 g) - don't get 'extra lean' beef as this doesn't make a good burger.
      • 2 tablespoons olive oil (it's not necessary to use 'extra virgin')
      • ½ teaspoon cumin
      • freshly ground black pepper and a large pinch of salt
      • 2 beaten egg yokes, to bind.

      Method:

      Place all incredients into mixing bowl and mix thoroughly with hands(!), allowing mixture to squeeze through your fingers, so that ingredients are well mixed.
      Shape into 3 - 4 patties, and flatten as much as possible.
      Place in bowl and cover with lid then put into fridge for at least 2 hours prior to cooking (to set).

      Grill (preferably) or fry, with moderate heat, turning occasionally until thoroughly cooked and a good brown colour.

      Serve with vermicelli (pasta) mixed with green pesto, and peas, or alternatively in sesame seed burger bun with tomato ketchup, and lightly fried sliced onions (optional).
