Sauce:Ingredients:
- 1 tablesp. olive oil
- 1 chopped onion
- 1 14 oz can tomatoes
- 1 teaspoon sugar
- salt and pepper
- 1 clove garlic, and half a teaspoon mixed herbs (optional)
Method:
Fry the onion gently in the oil until soft, then add garlic (if used - garlic cooks quicker than onions so should be added last).
Add the tomatoes, sugar, salt and pepper, and herbs if used.
Simmer for 15-20 minutes. Add a little stock, water or milk if it seems too thick.
Cut ham off ham end in neat pieces and add to sauce. Heat through well, while cooking pasta. Allow 2-3 oz (50 - 75 g) per person.
Any pasta of your choice can be used. Cook for 10-12 minutes in fast boiling salted water. Drain well and serve with the ham sauce on top.
Note:- A little olive oil added to the water prevents the pasta sticking together after it has been drained.
